Pierre Gerbais, Beauregard Rosé de Saignée
A serious grower Champagne from the Aube, crafted from Pinot Noir grown on Kimmeridgian soils. This is a serious rosé with substance: wild strawberries, redcurrants and subtle spice, held together by chalky tension and precise acidity. Vinous, gastronomic, and quietly powerful.

Albamar, Albariño O Sebal
From the granite and Atlantic-swept vineyards of Rías Baixas, O Sebal 2024 captures Albariño in its most vivid and saline register. Bright citrus zest, green apple and white peach meet crushed stone and a distinct maritime freshness. Precise, energetic and beautifully defined.

Chiara Condello, Predappio
Sangiovese from the limestone slopes of Predappio, interpreted with restraint and precision. In 2023, the wine leans towards brightness and lift: sour cherry, blood orange and dried herbs framed by vibrant acidity and fine, chalky structure. Elegant, focused and quietly expressive.

Each edition also includes a specially prepared digital booklet, where we share detailed notes on the wines and the dishes, moments, and moods we most enjoy pairing them with.
