MIZANPLAS IS NOW A MAGAZINE-BOOK!

Mizanplas began in 2015 as a blog focused on food and wine. With new flavours, new journeys, and new experiences, we too evolved.

In 2025, we are taking a bold new step:

Mizanplas is now a magazine-book.

The first issue of this magazine-book was born from:

• Gastronomic journeys across every corner of Japan;

• Six-hour feasts in Spain that make you forget time;

• Spirited conversations accompanied by wines sipped in cobweb-covered cellars in Rioja;

• And that final, masterful touch of a sushi chef, delivered in silence.

We did not dream of something mass-produced or quickly consumed.

We imagined a publication to be savoured, to be kept.

🇯🇵 A First-Time Traveller’s Guide: Japan

“I am not in a new country. I have landed on another planet,” I told myself. These thoughts accompanied me as the taxi neared the hotel. Years later, while reading a book in a café in Niigata, I came across a line written by Isabella Bird, a traveller who explored Japan in the second half of the 19th century: “Japan offers as much novelty perhaps as an excursion to another planet.”

Through the eyes of a traveller who had no particular interest in Japan yet felt like stepping onto another planet on that first visit, this piece traces a journey steeped in the quiet of Kyoto’s streets, the neon glow of Tokyo, and a culture built around food. More than a guide, it is an invitation, to reflect, to slow down, to delight in getting lost…

🇪🇸 1 City, 3 Days: Madrid

As is often the case, migrants tend to open restaurants that reflect their native traditions. Thanks to these movements, Madrid has come to host an extraordinary range of cuisines. In this way, it is not so different from other cosmopolitan cities like New York. But there is a key distinction: Madrid (and Spain in general) is full of people who think about food around the clock, and who treat good ingredients as sacred. In a city where people sleep and wake with food on their minds, the chance to enjoy delicious meals paired with excellent wines at all price levels becomes part of daily life.

A story of transformation through a relationship with Madrid. What begins with distance slowly turns into a love affair with a city of tapas bars, wine-soaked tables, and a kind of hedonism woven into everyday life. This personal guide, stretching from Angelita to La Caníbal, offers more than suggestions. It opens the door to experiencing the city not as a tourist, but like a local.

🛢️ The New World of Sherry in Three Sessions

As our glasses gradually empty and the sun begins its descent, Ramiro’s voice drifts on like a melody in the background. This is not a winemaker chasing the latest trend. He is someone whose roots, like those of his vines, are firmly embedded in the bedrock of tradition. “You must find your own path,” he says, gently swirling his glass. “You must not follow trends. Fashions come and go, but what matters is the relationship you build with the vineyard, the land, and the people. I call that tradition. My father worked these vines with his hands. He did not use chemicals. He did not look for shortcuts. Today, they call it organic or biodynamic. Back then, it was simply how we lived.”

A wine revolution in Andalusia. Across three sessions, the writers bear witness to the new wave of Andalusian winemaking: an approach that moves beyond organic labels, rooted in tradition yet driven by innovation. Through intimate conversations with producers, this piece sheds light on both the memory of the land and the ideology of those who cultivate it.

🎶 The Jazz Kissa Phenomenon

Based on an interview with Katsumasa Kusunose, founder of one of the leading magazines focused on jazz kissa, this piece explores the magical world of Japan’s silent cafés and bars, spaces entered solely for the act of listening. Much like quietly sipping a special wine, this story is a gentle reminder of the value of listening, silence, and shared moments.

🍾 Mizanplas Wine Notes

An alternative tasting notes section created by two writers unafraid of getting lost in the complex universe of wine, and choosing to approach it from a deeply personal angle. In Mizanplas Wine Notes, you will not find technical evaluations. Instead, you will discover honest reflections, lingering questions, and at times, sentences filled with admiration for the wines they have encountered.

We are shaping Mizanplas into a publication that approaches wine, food, and travel with passion—a spirited blend of independence, curiosity, and fun, without ever compromising on depth.

We are here for those already thinking about their next meal before leaving the table. We believe gastronomy is not just about Michelin stars, wine educators’ jargon, or sophisticated tasting notes.

We want to write our own recipe, steering clear of clichés and content shaped by commercial interests.

And as we do this, here is what we aim for:

- To keep wine and gastronomy free from suffocating jargon;

- To tell our stories through a language rooted in experience;

- To share not PR-driven narratives, but real experiences, emotions, and stories;

- To become an independent publication powered by its community

- To create content that makes readers think, reflect, and question.

Works as Executive Director in a financial services firm in New York. Known for his YouTube series “Understanding Wine,” his former blog Tadım Menüsü, and his articles on gastronomy for Mizanplas.

Tokyoite. Studied Japanese in Ankara and cognitive linguistics at the University of Tokyo. Works as a creative director at an IT company, while also producing original work in illustration and graphic design.
